The past month, we’ve been trying out some wonderful vegetarian/vegan recipes from a book I picked up called Fresh by Jennifer Houston. We’re not vegetarians but we do appreciate vegetarian cooking and all the health benefits that comes along with it. This book totally brings vegetarian eating to a whole new level. Every recipe we’ve tried is so refreshingly delicious, colorful and creative. Who knew jicama, carrots, zuchini & beets can look like spaghetti. I had to purchase a vegetable spiral slicer to make most of the recipes. It’s easy to use and super fast to slice all the veggies and not to mention how fun it is too. I’ve never made food this way nor have I ever heard of jicama before. So it’s really nice to bring new ingredients to our everyday home cooking. What I love about this book is it really gives a new spin to eating vegetables as the recipes are so creative.
