
For dinner last night, I just had a craving for pesto pasta so I decided to try out this recipe I pinned on Pinterest awhile back. It was so delicious and easy to make. If you have kids, this is a good way to get them eating kale – Luna loved it! Here are the ingredients according to Farmhouse Table’s recipe:
1 bunch kale, washed and leaves torn
1/4 c pine nuts, lightly toasted
2 cloves garlic, peeled and sliced
1/4 c grated parmesan, plus more for serving
1/2 c olive oil
salt & pepper
1 package paparadelle, cooked al dente

The recipe calls for Paparadelle pasta which I substituted to fettuccine as that’s what I had at home. I also substituted almonds for pine nuts. Pine nuts might make for a tastier pesto but the cost here is outrageous.
